Sun-dried Tomato Pesto

Serve over pasta with grilled chicken and veggies or as a marinade!


Ingredients:

1 cup of sundried tomatoes

2 garlic cloves

1/4 cup pine nuts (optional)

2 tablespoons fresh basil or parsley

1/4 cup Parmesan cheese

Olive oil to make pesto smooth (about 1/4 cup)

Salt and Pepper to taste

1/2 teaspoon crushed red pepper (optional)


Instructions:

1. Place sun-dried tomatoes in a pan with 1/4 cup of water and simmer over medium heat until tomatoes are soft, about 5 mins.

2. Drain water and combine tomatoes, basil, parsley, garlic, pine nuts and cheese into food processor.

3. Blend adding olive oil until smooth.

4. Add salt, pepper and pinch of red pepper flakes to taste.


Serve with pasta or can also be used as a marinade.
