Roasted Veggies & Feta

Serve as a side dish or with grilled chicken & pasta


Ingredients:

2 medium zucchini, sliced into 1/4" half moons

1 yellow squash, sliced into 1/4" half moons

1 head broccoli, cut into florets

1 head cauliflower, cut into florets

1 pint cherry tomatoes

1 onion, sliced

3-4 cloves fresh garlic minced

3 tablespoon extra virgin olive oil

2 tablespoons of Italian seasoning

8 ounces block of feta cheese crumbled

can use any of your favorite veggies, we like adding baby carrots and Kalamata olives


Directions:

  1. Preheat oven to 425 degrees. Add veggies, garlic, onion to baking pan. Drizzle with olive oil, Italian seasoning, salt and pepper.

  2. Roast in a preheated oven for 15 minutes. Stir the veggies and return to the oven for an additional 10 minutes.

  3. Remove from oven and add crumbled feta.

  4. Serve with GF pasta and grilled chicken or your favorite protien.
