Crockpot Lemon Chicken

Serve with roasted potatoes and veggies.


Ingredients:

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon ground black pepper

2 tablespoons butter

2 pounds boneless skinless chicken breast cut in half

¼ cup water

3 tablespoons fresh lemon juice

2 cloves garlic, minced

1 teaspoon chicken bouillon

1 teaspoon chopped fresh parsley


Directions:

  1. Mix together oregano, salt, and pepper in a small bowl. Rub spice mixture all over chicken breasts.

  2. Melt butter in a skillet over medium heat. Cook chicken in butter until lightly browned, 3 to 5 minutes per side. Then place in slow cooker.

  3. Mix water, lemon juice, garlic, and bouillon in the same skillet; bring to boil. Then add to slow cooker.

  4. Cover and cook on Low for 6 hours or High for 3 hours.

  5. Add parsley to the slow cooker 15 minutes before the end of cook time.
