Chicken Lettuce Wraps

Serve as an appetizer or for dinner.


Ingredients:

2 lbs ground chicken

3 cloves garlic, minced

1 red bell pepper , seeded and finely chopped

1/2 cup finely chopped yellow onion

1/2 cup GF hoisin sauce

3 Tbsp GF soy sauce

Salt and black pepper to taste

1 (8 oz) can sliced water chestnuts, drained and chopped

3 green onions, sliced

1 Tbsp rice vinegar

1 1/2 tsp sesame oil

2 heads iceberg lettuce

cilantro and hot pepper for garnish optional


Instructions:

  1. Place ground chicken and garlic in a saucepan, cook 5-6 mins until chicken is no longer pink.

  2. Add bell pepper, onion, hoisin sauce, soy sauce, 1/2 tsp salt and 1/2 tsp pepper and toss mixture.

  3. Cover and cook on low heat 15-20 minutes.

  4. Add water chestnuts, green onions, rice vinegar, and sesame oil, and warm through 5-7 minutes. Serve with iceberg lettuce cups and garnish.
