Broccoli Cheddar Soup

Delicious until the last drop!



Ingredients:

2 tablespoon butter

1/4 cup No Gluten In It Flour

1 yellow onion diced

3 cloves garlic pressed

1 large head of broccoli including the stalks (about 1 lb)

1 cup carrots, julienned

½ teaspoon salt

½ teaspoon black pepper

1/4 teaspoon nutmeg

1 cup heavy cream

1 cup milk

2 cups chicken or vegetable stock

2 cups grated cheddar cheese


Instructions:

  1. In a large pot over medium heat, add butter. Once hot add onion and garlic and saute until onions are translucent and fragrant (about 3-4 minutes).

  2. Add flour and mix into a paste.

  3. Pour in heavy cream, milk, stock, salt, pepper and nutmeg, bring to a simmer.

  4. Add broccoli stalks and carrots.

  5. Cover and allow to cook until broccoli stalks and carrots are tender enough to be pierced with a fork (about 15-20 minutes).

  6. If you do not like chunky soup pour soup into a high powered blender or use an immersion blender to blend until smooth.

  7. Stir in the cheese and enjoy!
